Savour the delightful flavours of a succulent Gammon Joint with this quick and simple recipe, perfect for any occasion.

Gather your ingredients: a Gammon Joint, cinnamon, bay leaves, peppercorns, coriander seeds, and onion.

Weigh the Gammon Joint and calculate the cooking time by allowing 20 minutes per 450g, plus an extra 20 minutes.

  • Place the Gammon Joint in a large pot and cover it with cold water.
  • Add your flavourings to the pot, such as cinnamon, bay leaves, peppercorns, coriander seeds, and onion.
  • Bring the pot to a boil and continue to cook for half of the calculated cooking time, periodically skimming off and discarding any impurities.
  • Preheat your oven to 200°C/180°C Fan/Gas 6 and line a large roasting tin with kitchen foil.
  • After boiling, carefully remove the Gammon Joint from the pot and use a small knife to remove the rind, leaving as much of the fat intact as possible.
  • Place the joint in the prepared roasting tin and roast in the preheated oven for the remaining half of the calculated cooking time.

Optional: for a honey glaze, brush a mixture of honey and mustard over the joint during the last 20 minutes of roasting.
